OK so beets are supposed to be super healthy and have a ton of awesome benefits, but I’ve never been able to get into them with the exception of juicing them (actually - yum!!). So here was my first attempt at roasting a beet. It was….. ok…? I guess…? I dunno, I am undecided. I just sliced some off and ate it plain. It’s definitely better than canned beets, which is all I’ve ever had before, but I was not ranting about how delicious this was. I will have to try again. Does any one know delicious (and healthy) ways to prepare beets?
